Ratatouille

Difficulty: Easy

Cooking: 30 minutes

Ingredients

  • 1 aubergine
  • 2 courgettes
  • 2 onions
  • 1 can crushed tomatoes or 4 fresh tomatoes
  • Dry/fresh thyme and basil
  • 2 cloves garlic
  • Olive oil
  • Salt and pepper

Method

  • Mince the garlic
  • Peel and dice the aubergine
  • Add the minced garlic to a pot with 3-4 tablespoons of olive oil on a medium heat
  • and cook for 30 seconds, until fragrant
  • Add the diced aubergine and cook for 5 minutes
  • While it cooks, roughly dice the courgettes and onions
  • Add the courgettes and onions to the pot and let cook for another 5 minutes,
  • stirring occasionally
  • If you’re using fresh tomatoes, dice those now
  • Add your tomatoes and herbs
  • Optional: add a tablespoon of tomato concentrate paste for extra flavour if you
  • have it
  • Turn the heat to low and let simmer for at least 20 minutes and for up to an hour,
  • stirring occasionally to prevent burning.
  • Serve with rice, pasta, potatoes or bread

Tips

This recipe is perfect for meal prep, as it freezes well and can be stored in the fridge for up to a
week. All ingredients available in most supermarkets.
