Bagels

Ingredients
- 3tsp yeast
- 250ml lukewarm water
- 540g flour
- 1tsp salt
- 1tsp sugar (optional)
- 1tsp baking soda
- Honey
- 1 egg
- Flaxseeds or sesame seeds (optional)
Method
- Add the yeast to the lukewarm water and dissolve the yeast (it should form bubbles if the yeast is alive which is good)
- Add the flour, salt and sugar and then knead until a dough is formed
- Let the dough rest for 30 minutes in the fridge
- Roll the dough out into a thick cylindrical shape and cut into equal sized balls
- Roll each ball out into a smaller cylinder and form the bagel shape by joining the two sides together
- Boil each bagel for 2 minutes on each side in a pot of water with 1tsp baking soda and a splash of honey
- Place all the bages on a tray lined with foil and parchment paper
- Crack an egg into a bowl and whisk it, the use it to egg wash the top of the bagels. Add the seeds over the top of the bagels at this stage.
- Bake in the oven at 220C for 30 minutes
Tips
