Breakfast paratha

Ingredients

  • 1 frozen paratha
  • 1 tbsp butter or oil
  • 1-2 eggs
  • Salt and pepper to taste
  • 2 tbsp grated cheese (optional)

Method

  • Crack your eggs into a bowl, add salt and pepper, and whisk with a fork until combined
  • Add the butter to a frying pan to melt
  • Once melted add the frozen paratha
  • Flip a few times until it is almost ready (browning on both sides) Remove the paratha from the pan
  • Add the eggs
  • Once the bottom of the eggs is cooked and the top is almost cooked (no longer runny), add the paratha on top and then flip the whole thing
  • Add the cheese at this stage if you are using it
  • Fold the eggs around the paratha and transfer to a plate

Tips

Frozen Parathas are normally located in the frozen Asian aisle in most large supermarkets or you can try your nearest Indian supermarket.

Keep your paratha frozen until you are ready to cook it otherwise, they can stick to each other. You can add vegetables such as mushrooms and peppers to your eggs to make this healthier. If you can’t find paratha, it can be replaced with wraps, but it won’t be as flaky. Check if the eggs are done by lifting one corner of them away from the pan to look for slight browning.
