Gyudon beef bowl

Ingredients

  • Frozen sliced beef (hotpot beef)
  • One onion
  • Two tbsp mirin
  • Two tbsp rice wine vinegar
  • Two tbsp shaoxing wine
  • 1/4 cup miso/dashi stock (optional but gives it great flavour – can substitute with water)
  • A splash of honey
  • White rice
  • Green onions and sesame seeds for garnish
  • 1 tsp oil for frying

Method

  • Add the oil to a pan or wok on medium heat Slice your onion into thin strips and add to the pan
  • Fry until softened
  • Add the dashi or miso stock with an equal amount of water and stir with the onions
  • Allow roughly half the liquid to evaporate
  • Add the mirin, rice wine vinegar, shaoxing wine, and honey to the pan and stir through the mixture
  • When you see the mixture bubbling and the liquid has reduced, add your frozen beef and cook it through
  • Once all the beef is cooked, switch off the heat and pour the mixture over a bowl of warm white rice
  • Garnish with sesame seeds and green onion

Tips

Most of the sauces can be found in the Asian supermarkets (occasionally you can find shaoxing wine in big Tesco), but these are pantry staples for any Asian. I always have them in my pantry! Buy one bottle and make this recipe a hundred times, you won’t get sick of it!
